Angel Food Cake

1 2/3c egg whites
1 1/2t cr. tartar
1c & 2T sifted cake flour
1 t vanilla
1 3/4c sugar
1 t almond extract
1/2t salt

Separate eggs - let whites stand at room temp. 1 hr. Use tube pan. Sift together 4 times, flour & 3/4c sugar. In large bowl, combine whites, tartar, salt & flavorings. Beat at high until whites peak - 1 1/2 - 2 min. Sprinkle in rapidly while beating on med. remaining 1c. sugar about 1 min. Using low, sprinkle in sifted flour mixture evenly & quickly - scraping up & over with folding motion until blended about 1 ½ min. Push batter into tube pan. Cut through batter with spatula in widening circles 6 times. Bake at 375 for 35 minutes. Invert and let hang until cold.
